This week is that last week of National Nutrition Month! It feels like its really flown by. Throughout this month we have discussed how to “put your best fork forward” by making small changes to our meals to make them healthier. Today I wanted to celebrate by enjoying a delicious dessert that still follows the healthy guidelines that we have discussed.
Yesterday I found the most delicious and filling Frozen Yogurt Dipped Banana Pop recipe, which was very convenient because I had a bunch of extra bananas that I needed to use up. This recipe was very easy and quick to do too. First you slice your bananas in half crosswise, and then insert popsicle sticks into the large end of the banana. For your frozen yogurt topping you mix some Greek yogurt, stevia and vanilla extract together and slather onto the banana. To finish the popsicle you roll it in granola for a nice crunch. To add some pizzazz, try adding some dried fruit like craisins or raisins to your granola mixture or even some dark chocolate cocoa nibs. Then you freeze the pops for at least 4 hours or overnight.
