A Farewell from our Director
This is a note from Trisha Mandes, with an announcement of her new business venture and departure from CC. Sent on April 28th to our Newsletter.
I’ve had the pleasure of directing Columbia’s Cooking over the last year and it’s been an amazing experience. I’ve worked with a wonderful team and had the pleasure of meeting and teaching a wide variety of people in the kitchen that I’ll never forget.
So, it’s with sadness that I announce my last day with Columbia’s Cooking will be Monday, May 2nd, but with excitement that my husband and I will work on our collective dream together moving forward — a “healthy meals to-go” service (please wish us luck! And yes, they’ll be plant-based :)).
It wouldn’t have been a successful year without the professional, kind and exceptional job of Casey McCurry, CC’s Program Coordinator who also has exciting news to share in her own, engaging and beautiful words, per usual, below.
I wish the upcoming Columbia’s Cooking team continued success and would especially like to thank Casey once again for exceptional job and support over the last year as well as the rest of the Columbia’s Cooking team — Dr. Brie Turner-McGrievy, Dr. James Hebert, our volunteer Culinary Advisor Erik Hoffman (my husband), our student interns and Julie Houston.

(And now on to Casey…)
In other exciting news, I (Casey) have been accepted into Winthrop University’s Masters in Human Nutrition Program and will begin classes in the fall. I am very excited about the classes I’ll be taking (and the 7 books I bought about food to celebrate the occasion.. 🙂 ) and can’t wait to learn more about health and nutrition. In the meantime, I’m excited to be at Columbia’s Cooking for the summer and to welcome the new Director very soon!
