This past Thursday we had class with Patricia Pastides, the first lady of USC and she made some delicious recipes from her two cookbooks. The recipes included Roasted Red Pepper and Feta Dip; Black-eyed Peas and Swiss Chard; Zucchini-topped Roasted Beets; Cherry Tomato and Garlic Bread Bake; Butter Beans with Fresh Mint; Braised Cauliflower and Slowly Sauteed Onions; Green Beans with Tomatoes; Spankorizo, Spinach, and Brown Rice; and Baklava.
Mrs. Pastides stated that she didn’t intend for it to be a vegetarian class it just worked out that way with the recipes she choose. All of it was very tasty and satisfying I wish I could share the recipes with you, especially the Baklava. It might have been the best Baklava I have every tasted. The Butter Beans with Fresh Mint were also a favorite of mine, I was able to take some home and my one and a half year old also approved of them!
Everyone here was excited to get to cooking but the passion that Mrs. Pastides has for cooking, health, and good food was inspiring!
